While first flush matcha is prized for ceremonial use and delicate straight preparation, it is not always the most practical choice for matcha lattes and other culinary applications.

Its refined aroma and subtle umami can be overshadowed by milk, while its premium cost structure may be less efficient for high-volume beverage programs. For latte and other culinary applications, second flush and autumn harvest matcha often provide better balance, stronger presence, and greater commercial consistency.

The Rare 5%: Kagoshima's Organic Terroir

Of the 10,000 tonnes of matcha produced globally each year, Japan accounts for exactly half. Within Japan, Kagoshima is a leading force, cultivating 1,600 tonnes. Yet, true organic matcha remains exceptionally rare. Only 500 tonnes of certified organic matcha exist worldwide—representing just 5% of global production—all exclusively grown in Japan.

As the largest organic production hub in the country, Kagoshima is the absolute heart of this scarcity. Here, on the volcanic foothills of Kirishima, we pioneer this rare cultivation. The mineral-rich ash from Sakurajima and strict JAS/international organic standards combine to create a deeply flavorful, highly sought-after matcha.

From Field to Powder

Our Process

  1. Shading & Harvest

    Three to four weeks before harvest, tea rows are covered with traditional black nets to boost chlorophyll and L-theanine. Only the finest leaves and bud are then selected at peak maturity — ensuring vibrant colour, deep umami, and superior nutritional density.

  2. Steam-fixing & Stone Grinding

    Leaves are immediately steam-fixed to lock in colour and freshness, then destemmed into pure tencha. Tencha is slowly cold-ground on granite stone mills to an ultra-fine powder — delivering seamless dispersion in any liquid or dough.

  3. Nitrogen Sealing & Export

    Finished matcha is immediately sealed in nitrogen-flushed, UV-barrier packaging and stored under refrigeration. Every export shipment includes full organic certification documentation and COA on request.
